Sprout Pasta Cake with Cheese

- Brussels sprouts (halved) – 200g
Olive oil – 1 tbsp
Balsamic vinegar – 1 tbsp
Penne pasta – 350g
Butter – 2 tbsp
Garlic clove (crushed)-1
Plain flour – 3 tbsp
Milk – 500ml
Wholegrain mustard- 2 tsp
- Green salad leaves, to serve (optional)
Mature cheddar (grated) – 200g
- Pre-heat your oven to 200C/180C fan/gas 6.
Now toss the sprouts in oil and vinegar and then tip them into your roasting tin.
Bake those sprouts for 10-15 mins and toss them again in half time.
Read the instructions from the pack and cook the pasta less than mentioned on the pack.
Now drain the pasta and put it aside.
Take a pan and heat butter in it. Add garlic in it and then flour in it and cook for 1-2 mins. Start adding milk and add it till the mixture is smooth. Now sim the heat and cook it for 5 – 7 mins until it gets thick.
Now remove it from the heat and add mustard to it. Now add most of the cheese, save a handful of it for the topping too.
Now add the seasoning to it and stir it well.
Add the pasta into it, mix well and put the mixture in a large baking dish.
Add the topping of roasted sprouts and the cheese we reserved.
You need to bake it for 20 mins or till the cheese topping gets golden and starts bubbling. Serve it hot and have a green salad with it if you would like.
