Christmas Pud Krispy Cakes

Easy to make pud crispy cake that is perfect for Christmas or other festivities. Peanut, top chocolate and raisin puffed rice cakes with festive holly icing and white chocolate.

Ingredients

  • Rice Pops – 50g
  • Chopped Raisin – 30g
  • Butter – 50g
  • Milk Chocolate – 100g (broken into pieces)
  • White Chocolate – 80g
  • Crunchy Peanut Butter – 2 tbsp
  • Mini Marshmallow – 30g
  • Ready-made icing holly leaves

Instructions

Take a bowl and put the raisins and rice pops into it. Put the milk chocolate, butter, marshmallows, and peanut butter into a small saucepan. Stir it on medium to low heat till the marshmallows are starting to melt but the butter and chococate have melted.

Further stir the rice pops till it is coated properly. Use a cling film to line an egg cup and then press a tablespoon of mixture ino the cup. Firmly press it to remove and peel off the cling film. Flat-side down, carefully place the pudding into a cake case. Repeat the same process with the remaining micture and leave leave it to chill until it is firm.

The white chocolate can be melted using a microwave. You can also just melt it in a bowl on top of a saucepan of simmering water. Over the top of each pudding, spoon some chocolate and then finally top it with icing holly leaves.
