Coronation Turkey with Homemade Chapattis

 Brighten up your turkey leftovers with a jar of homemade spicy mayo. This recipe also makes for an amazing sarnie filling.

  • Vegetable oil – ½ tbsp
  •  ½ Chopped onion
  • 1 Chopped garlic clove
  • Curry powder – 1 tbsp
  • Coconut milk – 125ml 
  • Chicken Stock – 125 ml
  • Leftover turkey – 425g
  • ½ tsp each turbmeric, ground coriander and ground cumin 
  • Chicken Stock – 125 ml
  • Mayonnaise – 200g
  • Toasted desiccated coconut – 2tbsp
  • Sliced onion, chopped tomato, and lettuce leaves, handful chopper coriander for serving

For the chapattis

  • Vegetable oil – 1 tbsp
  • Wholemeal or Roti flour – 350gm (keep some extra for dusting)


Add some vegetable oil in a heated saucepan. Next you need to fry the garlic and onion till the time both of them are lightly brown in colour. Put in all the various spice and let it sizzle for about a minute. Next, add the stock and coconut milk. Let it reduce till you get a spicy, creamy, thick onion mixture. Pour that in a bowl and let it cool before stirring it with mayo. You can store this in your fridge for about 7 days.

The next step is to get your chapattis ready. Take a bowl and put 1 tsp salt along with the flour. Add oil and start rubbing the flour using the tip of your fingers. Add lukewarm water (around 250ml) and mix it. Mix it till you have a firm dough. Next, knead the dough till it gets springy (usually around 10 mins). Keep it back in the bowl and keep it there for around half an hour. You then need to cut it into eight pieces like walnuts. Roll it out on thin discs on a surface that is slightly floured. Use a dry heavy based pan to get the discs pan friend. Pan fry each side for a minute. The chapattis should blister and colour. 

While serving, mix the turkey with curried mayonnaise. The desiccated coconut needs to be toasted in a dry pan till it colours golden.
