Red Wine Sauce with Dates

The perfect combination to a Christmas goose – this Date & Red Wine SauceĀ

  • Chicken stock – 600 ml
  • Balsamic vinegar – 3 tbsp
  • Red Wine – 250ml
  • Port – 3 tbsp
  • Stoned and halved date – 200g


The first step involves boiling down the red wine, chicken stock, balsamic vinegar and port by two-thirds. In the meantime, make sure the dates are covered with boiling water. Let it be for 5 minutes and then drain it. The reduces stock needs to be strained and then kept back in the pan along with soaked dates. After simmering the sauce for around 3-5 minutes, season and keep it warm.
