Easy Wreath Cake

Ingredients

  • 20cm round or 1 x 18cm square Christmas cake
  • Fresh cranberries
  • 3 tbsp white caster sugar
  • 300g marzipan
  • 1 egg white , frothed with a fork
  • 500g pack fondant icing sugar , sifted
  • Small bunch sage
  • Apricot or raspberry jam – 3 tbsp sieved and warmed
  • Small bunch bay leaves

Instructions

In the egg white, dip a few cranberries and roll it a few times in caster sugar. Do it till it’s well coated and then leave it to set. You can also use glace cherries. Use a little jam to brush the top of the cake. Take the Marzipan and roll it out to a size that is a bit larger than the top of the cake and then put it on the top. Make sure to properly press it down and trim on the sides of the cake.

Mix some of water into the fondant icing sugar till it smoothens up and gets a stiff consistency that will not run. Next pile it on the top of the cake. Use a palette knife to push the edges which will ease down the sides a bit. Lastly make a wreath using the bay and sage and put on some frosted cranberries.
