Iced Chocolate and Cherry Trifle
Try this special iced chocolate and cherry trifle that is easy to make and a great option for dessert to keep your guests happy.

- Whipping cream – 150 ml
- Muffins or Chocolate brownies – 80g
- 1 jar/tin black cherries syrup – appx 400g
- Mascarpone – 150g
- Dark chocolate (chopped) – 200g
- 2 tbsp icing sugar
Take a 900g terrine or loaf tin and line it with baking parchment. The cherries need to be tipped into sieve over a saucepan. Make sure to frain off the syrup and then bring it to simmer and boil. It will take about 5 minutes for it to thicken and reduce by half then stir back in the cherries. Spoon the syrup and cherries in the tin base and leave it to cool.
Next, you need to whip half of the cream till it thickens but make sure it doesn’t get stiff either. Spoon the cream over the cherries in a layer. The cupcake or brownie then needs to be cut into pieces which you have to use to make another layer on the top of the cream. Take a small pan and melt approx 100g of choclate and then leave it to cool.
Take a bowl and tip the mascarpone in it. Also add the icing sugar and the remaining cream, which you need to whisk together with electric beaters. Keep whisking them till it combines into a thick misxture following which you need to stir it in the melted chocolate using a spatula. Smppthen the surface after spoonign the chocolate mix on top. Keep the trifle in the refrigerator for about half an hour.
In the same manner, melt the leftover chocolate and leave it to cool a little. Further, you need to pour that into the trifle and then tip the tin back & forth till it becomes an even and thin layer. Wait till the chocolate is set and then cover the terrine or tin before putting it into the freezer. Freeze it for about 1 week.
