Prawn gratin and leek

Leek and prawn gratin is a scrumptious appetizer. This easy to cook starter is rich in flavour and taste and can leave your guests in awe.

Ingredients

  • Leeks- 4 medium
  • Olive oil- 3 tsp
  • For seasoning- curry salt
  • Butter (optional0 – one knob
  • Raw peeled tiger prawn- 250g
  • Whipped cream- 100 ml
  • Hollandaise sauce- 1 batch
  • Chopped coriander and parsley- fresh and handful

Instructions

Remove the top and bottom of the leeks. Cut them in halves and wash them properly.  

Make fine slices of the leeks and drain the water. 

Take a frying pan and heat two spoons of oil. 

For five minutes fry the leeks till they become tender and diminished to two-thirds. 

Use the curry salt to season the leeks and if needed add the knob of butter to it. 

Pour the leeks into a bowl and heat in on the grill on high flame. 

Wipe the pan nicely and heat the residual oil in it. 

Add curry salt to the prawn for seasoning and saute it till it turns pinkish. 

Mix the prawns into the leeks. 

Form soft peaks with the whipped cream and pour it in the hollandaise sauce and add herbs and then fold it into the prawns and leeks. 

Now put this in the grill for at least five minutes and serve instantly.
