Leftover Turkey Fricassee

Don’t let your leftover turkey go to waste instead use it to serve this delicious creamy fricassee.

  • Butter 50g
  • Quartered chestnut or button mushrooms 100g
  • Dry Sherry or White Wine – 100ml
  • 200ml Turkey or chicken stock
  • Small bunch of chopped parsley
  • 1 tbsp plain flour
  • Crème fraîche or double cream 150 ml
  • Leftover chopped or shredded boneless cooked turkey 800g 


Use a sauté pan or deep frying pan to heat the butter until it sizzles. After that, put in the mushroom and let it fry for 4-5 mins that will soften it. Sprinkle flour over it and let it stir until a paste forms. Then give some more minutes for it to cook.

Further, take the sherry or wine and splash it in and leave to to bubble for a minute before stirring in the stock and brining it to boil. Lower the heat to a simmer and then stir in the cream. After seasoning, stir the turkey in. Until the turkey gets heated enough, continue to simmer and then take it down. If you are using parsley then and stir it in too. You are good to go. Serve it with mash, pasta or rice.
