Red Cabbage with orange and prunes

Flavour red cabbage with orange, prunes and port that will indulge you perfectly in the festive mood. You can prepare it and store it in the fridge for up to three months.

Ingredients

  • Butter – 50g
  • Sliced large onion – 1 pc
  • Port – 200ml
  • Juiced and zested Orange – 1pc
  • Red large cabbage – 1 pc (sliced thinly, cored and quartered)
  • A pinch of ground cloves
  • Large cinnamon stick – 1 pc
  • Roughly chopped pitted prunes – 100g
  • Light brown soft sugar – 2 tbsp

Instructions

Heat oven to 140C/160C gas 3/fan. The butter needs to be heated in a casserole dish till it sizzles down like nutty brown. Put in and fry the onions on mid-heat for about 15 minutes till it softens and colours.

The remaining ingredients need to be put into a large sized pan. Make sure you cover it with a tightly-fit lid. Keep it in the oven for about an hour. Take another hour to stir and cook is till you find that the cabbage has gotten tender. If the fan looks dry, add some water into it. And if there is liquid in the pan, increase the heat and let it evaporate. Season it with some salt before you serve.
