To make a relishing appetizer, you can cook delicious refried roasties from leftover potatoes.
Take a large frying pan and heat one tablespoon of oil in medium heat.
Pour the pickled onions in the heated oil and fry for at least four minutes for caramelized effect.
Pour the thyme leaves and cayenne along with the roasties by adding one more tablespoon of oil. Once done, take a wooden spoon and use the back of it to slightly crush each of them. Then let them fry for up to four minutes to get a crispy layer on one side and toss it.
Pour the rest of the oil and again fry and toss the roasties for an added crunchiness.
If the roasties fall a bit apart, there is nothing to worry about it as the scraped bits will become crunchier.
Add seasoning as per taste and serve it warm to your guests.
