Coriander Mayonnaise and spiced egg in vol-au-vent filling

Pastry case canapes are in the offing this season. You can make it more delicious by filling it with herbs, curried egg mayo along with a blob of mango chutney. This relishing combination is worth savouring.

  • Vol-au-vent cases- 10
  • Hard-boiled and peeled eggs- 3
  • Mayonnaise- 4 tsp
  • Mild curry powder- 2 tsp
  • Finely chopped spring onions- 4
  • Chopped coriander along with extra for serving- 2 tsp 
  • Wring lemon juice
  • Mango chutney


Add the eggs to a small bowl and use a fork to squash them nicely. 

Mix the curry powder, mayonnaise, coriander, lemon juice, spring onions and add some seeasoning to it. 

Let it chill for a while. 

Divide the mixture into ten vol-au-vent cases. Scatter a few coriander leaves on it and put a small blob of the mango chutney.
